Slow-cooked sous-vide for 12 hours, naturally seasoned with garlic, black peppercorns, nutmeg, and bay leaf, it’s incredibly tender, moist, and ready to finish in your oven.
Because it’s seasoned naturally (with no nitrates, nitrites, or artificial fillers), the exterior may appear slightly grey when unwrapped—this is normal. Slice into it, and you’ll find a beautiful, vibrant pink center that reflects its premium quality and gentle cooking method.
Best served warm and glazed, but leftovers are also delicious cold in sandwiches, salads, or charcuterie boards.

For the Pork Loin
• 1 Savory Farms Sous-Vide Berkshire Pork Loin “Ham”
• 1 tbsp olive oil
For the Glaze
• 1 Savory Farms Pre-Made Glaze Sauce (free with purchase)
For the Vegetables
• 8–10 small gold potatoes, whole
• 8–10 whole carrots
• 1 tbsp agave syrup (optional, as in original)
• Salt & pepper (to taste)
Instructions
Step 1: Blanch the Vegetables (matches original recipe)
Carrots:
Bring a pot of water to a boil. Add whole carrots and cook until just tender. Drain and set aside.
Potatoes:
Place whole potatoes in a pot of cold or room-temperature water. Bring to a simmer and cook until fork-tender. Drain and set aside in a bowl with the carrots.
Step 2: Preheat the Oven & Prep the Pork Loin
Preheat your oven to 400°F (200°C) — consistent with the original recipe’s roasting method.
Drizzle a baking sheet with olive oil and place the Berkshire Pork Loin on top.
Roast 10–15 minutes, just until the exterior becomes lightly golden and slightly crisp.
Step 3: First Glaze Layer
Remove the pork loin from the oven.
Brush generously with your Savory Farms pre-made glaze.
Return to the oven and roast 5–7 minutes until the glaze begins to caramelize.
Step 4: Toss the Blanched Vegetables
Toss the carrots and potatoes with:
• agave syrup (optional)
• salt
• pepper
Set aside while the loin finishes glazing.
Step 5: Flip the Pork Loin & Glaze the Other Side
Flip the pork loin over.
Brush the second side generously with glaze.
Return to the oven and roast another 5–7 minutes until caramelized.
Step 6: Final Roast with Vegetables (matches original)
Arrange the blanched carrots and potatoes around the pork loin on the baking sheet.
Optional: add another thin layer of glaze over the pork for extra color and flavor.
Roast everything together for 5–7 minutes, until the glaze is shiny and the vegetables are lightly caramelized.
Step 7: Slice & Serve
Let the pork rest for 5 minutes before slicing.
Transfer the sliced pork loin onto a serving dish and arrange the vegetables around it.
Drizzle remaining glaze or pan juices over the top.
