Every salami is crafted with precision, using only natural beef or pork casings—never collagen or synthetic alternatives. These natural casings breathe during the aging process, helping retain moisture and develop deeper, more authentic flavors and textures. Each salami is also hand-tied, a labor-intensive step that reflects our commitment to true craftsmanship and ensures the highest quality in every bite.
We believe in crafting salumi in small batches to ensure meticulous attention to detail. This process allows each product to develop its own unique character, delivering authentic flavors that reflect the passion and precision behind every piece.
Our aging and fermentation techniques are essential to the flavor, safety, and integrity of every salami we make. Each batch is carefully fermented for a minimum of 48 hours—double the standard industry time. This longer fermentation results in a higher pH, which naturally reduces pathogens, lowers acidity, and enhances both digestibility and flavor. After fermentation, our salami is patiently aged in small batches, allowing deep, complex flavors to fully develop. The result is a truly artisanal product with exceptional character in every bite.
At Angel’s Salumi, we proudly use heritage Berkshire pork in our pork-based products. Known for its superior marbling, tenderness, and rich, deep flavor, Berkshire pork (also called Kurobuta) is often considered the Wagyu of pork.
