The Elk & Berkshire Pork Salami from Angel’s Salumi is a gourmet blend of wild elk and Berkshire pork, seasoned with Red Port Wine, Red Dutch Cacao Powder, and Pink Peppercorn. It is fermented and aged for three months, resulting in a bold and complex flavor profile.
Made with a natural pork casing that peels away easily, this artisanal salami reflects traditional curing techniques. Unlike mass-produced salumi that often use synthetic casings, the natural casing enhances the authenticity and presentation of this product.
This salami is shelf-stable and does not require refrigeration for storage or shipping. For long-term storage, refrigeration is recommended to maintain freshness. Once opened, the salami must be refrigerated. For best flavor and texture, serve cold.

Bought as a gift and did not disappoint. Has a great taste and impressed the avid hunter who it was bought for. Arrived on time however the cold pack that was included was not cold and neither were the meats. Meat combo was the elk, venison & buffalo.
Angel's Salumi always has the best products for my restaurants. Hard to find suitable items in my area so this is my go to for quality products.
